Can we be honest with each other? The chocolate mocha cake is a love-hate relationship. You either love it, or you hate it. For coffee lovers, the chocolate mocha cake is a dream come true.
This coffee lover’s chocolate mocha cake recipe has a secret. It’s not a deceptive secret or a secret that would hurt anyone. But the secret ingredient took this chocolate mocha cake recipe over the top. Aside from being an easy chocolate mocha cake, it was the best chocolate mocha cake I have ever made, and man did that surprise me.
This recipe for chocolate mocha cake starts with Betty Crocker’s Super Moist Chocolate Fudge cake mix. It uses eggs and applesauce. I have been experimenting a lot with substituting applesauce for oil or butter in most of my favorite recipes. Using the cake mix as the base of the chocolate mocha cake recipe made the substitution an easy one.
We bake a lot, and my husband is not a coffee lover. I had to have plans for my experiment. He warned me and told me that I better make sure it’s good before I promise it to anyone.
I have some faith in myself and knew that by starting my chocolate mocha cake using cake mix. I couldn’t go too wrong. I called my neighborhood cake critic, Rosey, and promised her dessert for the evening.
I followed the box directions to a “T’'. I only substituted the applesauce for the vegetable oil in equal quantities. The crumb of the cake was perfect. The flavor was so deep and moist, and the texture was spot on. When Rosey tasted it, she was so impressed and agreed, it was the best chocolate mocha cake she had ever tasted.
I am not sure this would have been the case if the cake was made from scratch. I have found that when you substitute applesauce for oil in baking, in most cases, it changes the end result. Given this, I typically just go all in when I bake, but I do keep trying. Honestly, I don’t think I will make chocolate mocha cake any other way again. It was that good.
Secret Hack for Incredible Chocolate Mocha Cake
Ingredients
- 1 box Betty Crocker Super Moist Chocolate Fudge cake mix
- 1 ¼ cups water (room temperature)
- ½ cup applesauce (room temperature)
- 3 eggs (room temperature)
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Using a heavy-duty stand mixer, mix the cake mix, eggs, and applesauce using speed two for two minutes.
- Pour the cake batter into a greased and floured eight-inch x three-inch round pan.
- Bake for 35 - 40 minutes or until a toothpick inserted in comes out clean.
- Using a serrated knife, trim any cake that is popping up over the pan.
- Cool the cake completely.
- Turn the cake upside down.
- Using a cake leveler, cut the cake in half.
- Frost the top of the bottom half with the mocha frosting and place the top half on top. The top of your cake will be nice and flat.
- Frost the sides and top of your cake with the remaining mocha frosting and decorate as desired.
- ¾ cup shortening
- Pinch of pink Himalayan salt
- 3 ¼ cups powdered sugar
- ¼ cup of hot water
- 2 TBSPJuan Valdez freeze-dried coffee
- Dissolve the coffee in the hot tap water.
- Using aheavy-duty stand mixer, cream the shortening and salt together until well mixed.
- Add the powdered sugar and mix until it looks like little pebbles.
- Gradually add the coffee mixture and whip until it’s light and fluffy.
