Heavenly Goat-Milk Yogurt Parfait With Delicious Granola
I love yogurt, I always have. Let’s be honest not all yogurt is created equal. Growing up, I was given a kids yogurt. Who knows what was in it. In my 20’s I bought fruit on the bottom yogurt. Their ads were the best. In my 40's I needed to eat probiotic yogurt. I turned 50 and reached for Greek yogurt. I thought I finally found my true love.
The problem was my husband is bothered by lactose and most dairy products. The search was on for yogurt that we both could eat and loved.
Loving Greek yogurt, you can imagine that a plant-based yogurt just was not going to cut it for me. They are light and liquidy, where Greek yogurt is sturdy and has substance. My husband uses yogurt mostly for smoothies, while I love a parfait in the morning, so we kept looking.
Then we came across goat-milk yogurt and agreed that we found a match made in heaven.
Goat-milk yogurt is fully digestible by him, and while it is not as thick as Greek yogurt, it is sturdy enough to use in a parfait. I also found that it works really well in place of sour cream.
Healthline.com has a great article on the comparisons of goat-milk yogurt to cow's milk and plant-based milk.
This recipe for yogurt parfait uses goat-milk yogurt, frozen mixed berries, and your favorite granola. I make mine fresh when I want it because I work from home and have time to do so.
These beauties are perfect for a make-ahead, grab-n-go breakfast. You can layer the yogurt, fruit, and granola in a small mason jar put the lid on it, and set it in the fridge until your ready to run out the door. It's an excellent mason jar breakfast.
