Easy Vegetarian Chili Recipe

What if I told you 15 minutes of prep time and 3 steps would give you the most delicious chili you ever had? What if I told you this crockpot chili recipe is vegetarian and so easy? Would you make it?

You have to at least try this chili recipe for game day. It’s vegetarian, so healthy, and so easy, in the crockpot. You will be the hit of the party.

I picked up a recipe card 20 years ago at a grocery store, and thought, hmmm, sounds ok, let me go home and try this. As with all recipes, I find there’s always something I do to bring it up to another level.

Easy Vegetarian Chili Recipe

This is a vegetarian chili recipe for the crockpot that comes together in no time. 15 minutes of prep time, add everything to the crockpot, set it on high for 4 hours or low for 8 hours, and enjoy. How much easier can a vegetarian chili recipe get?

To make this vegetarian chili recipe into a healthy meat chili for your carnivore lovers is just as easy. Brown up a pound of ground turkey and add it to the crockpot with the other ingredients.

I use a combination of organic chili powder and ground ancho chile powder. Ground ancho chile powder has a flavor that is mild, smoky, slightly sweet. I find it compliments the crushed pineapple perfectly. If you don’t have the ground ancho chile powder, you can use all organic chili powder. Just realize the flavor will be less intense. Pre-sliced mushrooms and matchstick carrots from the grocery store simplifies the vegetarian chili recipe even more.
