I use a combination of organic chili powder and ground ancho chile powder. Ground ancho chile powder has a flavor that is mild, smoky, slightly sweet. I find it compliments the crushed pineapple perfectly. If you don’t have the ground ancho chile powder, you can use all organic chili powder. Just realize the flavor will be less intense. Pre-sliced mushrooms and matchstick carrots from the grocery store simplifies the vegetarian chili recipe even more.
