  • 1 cup Enjoy Life Dark Chocolate Morsels
  • 1/4 cup Runamok Maple Bourbon Barrel Aged Maple Syrup
  • I cup cooked mashed organic sweet potatoes- skin removed
  • 1 cup ripe organic avocado- skin and pit removed
  • 3 TBSP Better Body Foods Organic Cacao Powder

Instructions

  1. Melt the Enjoy Life Dark Chocolate Morsels in a microwave oven at 30-second intervals until smooth. Stir every 30 seconds. Or melt over a double boiler.
  2. Add the mashed sweet potato, avocado, Runamok Maple Bourbon Barrel aged Maple Syrup in a high-speed blender like a Vitamix, melted Enjoy Life Dark Chocolate Morsels, and Better Body Foods cacao powder.
  3. Blend until it's smooth and creamy. Add more maple syrup if needed to get a smooth consistency.
  4. Scoop into 4- 4oz serving cups and chill for 1 hour. Serve cold

Notes

  • If you don't have cooked baked sweet potatoes in the refrigerator, preheat your oven to 425 degrees Fahrenheit and bake for 30 minutes with the skin on. The sweet potato should be easily pierced with a fork when fully cooked. Let cool completely. This is the cooking time referred to in the recipe.
  • Freeze the individual servings for 4 hours for a nice cream to be served the same day. Do not store in the freezer. Avocado does not freeze well.
