The Queen's Heart Cookies
Ingredients
- ¾ cup shortening
- Pinch of salt
- 3 ¼ cups powdered sugar
- ¼ cup of water
- Red food coloring
- 3 TBSP meringue powder
- 3 ¼ cups powdered sugar
- 5 TBSP water
- Red food coloring
- Edible Gold Luster Dust
Instructions
- Preheat the oven to 375 degrees Fahrenheit.
- Roll the cookie dough out to 1/4 inch on a lightly floured board, be sure the consistency is like your earlobe.
- Using a medium-sized heart shape cookie cutter, cut all the cookies and place them on a greased 11x17 cookie/jelly roll pan.
- Bake for 10 - 12 minutes, or just until set.
- Slightly loosen the cookies using a small thin spatula, and let them cool completely.
- Once completely cooled, pipe small round dots on the underside of ½ of the cookies.
- With the other half of the cookies, cover them with the red royal icing and let dry.
- Top each frosted cookie with the royal iced heart-shaped cookies to make a sandwich.
- Using the Edible Gold Luster Dust and a small food-grade paintbrush dipped in vodka, paint a small crown on top of each sandwich cookie.
- The finished cookies store well in an airtight container. Do not refrigerate or freeze them. It will ruin the royal icing.
- They are delicious freshly made but get better overnight. The flavors meld together, and the cookie softens from the filling.
- Using a heavy-duty stand mixer cream the shortening and salt together until well mixed.
- Add the powdered sugar and mix until it looks like little pebbles.
- Gradually add the water and whip until it’s light and fluffy.
- Using a heavy-duty stand mixer fitted with a grease-free metal bowl and whip, Sift the powdered sugar and meringue powder into the bowl.
- Add the water and mix on low until the ingredients are incorporated.
- Increase the speed to medium-high and mix for about 1 more minute. The frosting should drip off the whip when the mixer is turned off and lifted and flatten out in the bowl.
- Keep the bowl covered with a damp towel as you decorate the house.
