These eggs get a little kick from just the right amount of hot chili sauce. The fresh farm eggs are a definite bonus, but feel free to use organic, free-range eggs from your favorite grocery store if you don't have a resource for fresh ones.
Not all of us are lucky enough to have farm-fresh eggs for breakfast. I have a connection, and once in a while, a visit from my son will have me with farm-fresh eggs. This easy breakfast idea is delicious, versatile, and fast. It will become your go-to breakfast this year.
Ingredients
2 TBSP Avacado oil
1 breakfast sausage patty chopped
1 cup mixed greens
¼ cup chopped red onion
1 small cucumber sliced
½ celery stalked chopped
2 large eggs
Sprinkle of sharp cheddar cheese
Sprinkle of Sriracha hot chili sauce
Directions
Add the mixed greens to 1 dinner plate.
Top with ¼ cup chopped red onion, 1 small chopped cucumber, ½ stalk chopped celery.
Preheat a small frying pan over medium-high heat.
Cook the sausage patty until it’s browned, remove it from the pan, and set it aside.
Add 2 TBSP Avacado oil to the pan and heat on low just to cover the pan.
Add the eggs to the pan and cook until the whites are no longer translucent.
Flip the eggs over, and cook for 1 more minute.
Add the eggs on top of the mixed greens.
Top with shredded cheese and a few sprinkles of Sriracha hot chili sauce.
