 This has to be one of the best white fish recipes I have made. The baked fish recipe uses a nice mellow white fish.

For ease, get nice size fresh fish fillets from your local fishmonger or fresh fish grocery. We happened to use cod because that was the best-looking whitefish on the day I made this baked fish. You can use other whitefish, like flounder, halibut, haddock, or sole. They all will bake a nice fish dinner.

The white sauce for the baked fish is simple and easy. Consisting of white wine, seasonings, orange juice, and a splash of Patrón Citrónge. Sound yummy? It is.

Not only delicious but super easy. This baked fish recipe comes together in one pan. There is no messy clean-up.

 Using sweet pearl onions works well with all baked fish dishes. Full of antioxidants and anti-inflammatory agents, these onions are healthy and sweeter than regular white onions. You can use frozen pearl onion if you have them, but fresh ones are always best.

To easily peel pearl onions, dunk them in boiling water, drain, cut off the end and squirt the little beauty out of the skin. Likewise, you could substitute shallot and scallions.

 I have friends who really don’t like mushrooms for one reason or another. If you have a finicky eater who would rather not eat a mushroom, sautee them on the side and serve them separately. They really bring this baked fish to another level.

 Serve this dish for company, date night, or fast family dinner night. Whitefish is mellow and sweet to accommodate even the fussiest of eaters. The dish serves beautifully and keeps your time in the kitchen minimal so you can enjoy everyone’s company.

  • ½ cup dry white wine
  • 1 tsp dried organic Italian herb seasoning
  • ½ fresh-squeezed orange juice
  • 3 TBSP Patrón Citrónge
  • 1 cup peeled pearl onion sliced in quarters
  • 1 pound baby Bella mushrooms sliced
  • 1 ½ pound fresh cod totaling 4 pieces (or other fresh white fish)
  • 1 tsp organic paprika
  • 2 TBSP fresh chopped parsley

Instructions

Baked Fish In White Sauce Directions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a small mixing bowl, add the dry white wine, Italian herb seasoning, fresh-squeezed orange juice, and Patrón Citrónge.
  3. Whisk well.
  4. In a inch x 7-inch baking dish, add ½ of the sliced pearl onions and sliced baby Bella mushrooms.
  5. Top with white fish fillets.
  6. Top fish fillets with remaining sliced pearl onions and sliced baby Bella mushrooms.
  7. Pour the citrus sauce ingredients over the fish fillets.
  8. Cover the baking dish and bake for 30 - 45 minutes, or until the fish fillets are opaque and the onions are slightly golden.
  9. When fully cooked, sprinkle with paprika and chopped parsley.
